Aspira College of Management and Design once again worked with a renowned chef Mrs. Youn Jeong Choi from Korea who is currently living in Belgium to showcase interesting recipes from the Korean cuisine.
The workshop took place from 7th until 18th of November 2022 joining Aspira gastronomy students from all three years of the study programs.
In general, Korean cuisine is known as one of the world’s healthiest cuisines because of the wide use of natural and seasonal componentes of their food sources. It is largely based on rice, vegetables, seafood and, at least in South Korea, meat. These ingredients were also included in many recipes cooked by the students. Students from the 1st year of their studies had a chance to prepare Korean Street food and students from the 2nd year basically focused on the SSAM Table which is a traditional Korean’s BBQ table. The main part of the BBQ is the meat which can be beef and/or pork marinated with different sauces and of course, fresh vegetables especially a variety of palm-sized vegetable leaves that can be wrapped around the meat. On the other hand, students from the 3rd year cooked a whole three-course menu including silken tofu as an appetizer, as a main dish they chose a traditional bibimbap which is a rice bowl topped with all sorts of seasoned vegetables, marinated beef, a fried egg sunny side up, all finished with a bibimbap sauce.
Throughout the workshop you could see the huge interest of the students to learn about a new cuisine, and in this way also a new culture. Besides expanding their cooking skills, they also enhanced their taste buds.
