A Japanese chef with an address in Marseille visited Aspira and teach second-year gastronomy students fish cooking techniques and expanded their knowledge.
Ippei Uemura was born in Kyoto and now runs extremelly successful restaurant that earned a Michelin star in the south of France. His restaurant “Tabi” focuses on fish dishes, from freshly caught fish processed in the traditional Japanese way. In addition to fish, some of his sweets, which are on the menu of restaurants in the heart of Marseille, are especially praised.
On Friday, October 6, he transferred the knowledge gained through culinary education and years of experience working in the kitchen and running a restaurant to the students, who listened carefully during the two-hour workshop and tried their hand at preparing fish.
– Every opportunity to acquire new and practical knowledge is why we study at Aspira, and we used this opportunity and learned a lot from boss Uemura, students concluded in unison.
